Cavalieri has a special flavor profile, it is often associated with tones of cherry and berry. In my experience, the cherry flavor is not as pronounced as it is often taunted. This fig is very juicy and sweet. The flavor is overall delicious and refreshing. The figs ripe mid to late in the season. You need to keep watch for this fig because critters love it. I have a constant fight with squirrels and chipmunks, that's how good this fig is. The figs are large in size and very succulent. The tree is an average producer and grower; the foliage is very ornamental.

Capoll Curt Negra is another excellent variety from Montserrat Pons i Boscana. I am a fan of any fig that Mr. Pons describes as having a "flaming red" pulp that is "sweet and delicious". The figs from this variety exhibit cracking when ripe. They are split resistance even when having a somewhat wide ostiole. I really enjoy this fig; I can only describe them as having a deep berry flavor that is very complex. At times some of these figs taste like "black raspberry" jam. The texture is jammy and at times very dense. These are really exquisite figs. The tree is very vigorous, the foliage is very ornamental with large sturdy leaves. Anyone looking into MPs figs need to have this variety, it is a true example of top figs.

Exquisito figs have been very impressive in flavor and texture. The texture is creamy with a distinct thick syrup similar to that of the Italian-258. The flavor is figgy with a unique bright berry tone (very different from any of our other varieties). The figs set early and ripen middle to late in the season, it is a good producer. The tree likes sunny areas and seems to handle abrupt weather changes well. This is a variety to consider for its unique flavor and good quality figs.

Rubado is a fig of Italian origin, it was documented and propagated by Sergio Carlini. Rubado is a very special fig. Its flavor is distinctive, and its texture is succulent and syrupy. The flavor is sweet with some light caramel and figgy tones. The flavor is unique and definitely hard to capture. The production is average. Figs start to ripen in late September, cracks are typically a sign of ripeness in this variety. In summary, an amazing variety. It has been in our top 5 for the past years.

There are multiple “honey” figs in our collection. However, the one that comes closest to tasting like actual honey is Yellow Greek. When the figs are collected at peak ripeness in mid-summer, they taste like a spoon full of honey, the texture is very soft almost like jelly. The figs are small and have a subtle beauty. The tree is very productive and sets figs on an extended period, starting on mid-July and ending on late August. The tree takes about 2 years to fully mature and produce high quality figs. Moderate watering is key for ensuring a great concentration of sugars in the figs. It is important to avoid over watering and only water the soil and root system.

Coll de Dame Blanc is well known by collectors and fig enthusiasts. It is with no doubt a must have variety for its flavor and texture. After many years of experience with this variety we have manage to get consistency in Upstate NY. Some of the tricks include an early start and sufficient fertilizing. In our experience Coll de Dame types require more nutrition than others (when relating to potted trees). We wake the tree in the greenhouse around middle of March, then pinch around early June. On dry-hot summers, most of the crop ripens in mid-September with excellent quality.  Figs have a subtle sweetness but a very rich flavor. The texture is dense, almost like eating the filling from a baked good. This is really a superior variety.
