Ravin de Calce originates from the Pyrénées-Orientales region in southern France, bordering Spain. This fig is excellent. I consider this a top cultivar as it is productive and has a very distinctive berry taste. In fact, some of the fruit that ripens in the peak of heat and dry weather can exhibit complex berry flavors. The texture is firm, and nectar accumulates in the inside. The nectar is exceptional, sweet and viscid. It is difficult to know when the fig is ripe as it remains firm with no droop even when fully ripe. If anything, the only sign of peak ripeness is nectar scaping the ostiole. The ripening period ranges from September to late October. One of the key concerns with this variety is that figs do split in humid conditions. Moderate to low watering practices are needed to avoid splitting.
